I’m a big fan of people who are doing the keto diet getting most of their carbs from healthy veggies. You need vegetables for nutrients. Certainly, you need the fiber when you’re on keto; vegetables are also a source of other vital nutrients including potassium and folic acid.
Winter veggies are some of my favorite. Starting in the spring, we get our fair share of fresh vegetables. For me, the winter veggies are truly the superstars. Having that fresh goodness in the cold winter months makes me enjoy eating keto that much more.
But an important part of enjoying winter vegetables is having a variety of delicious recipes for preparing them. You (okay, I) can only eat so many kale chips and riced cauliflower. The key to success on any health journey is not having to eat the same foods day after day. I went searching for new keto winter veggie recipes and found these goodies that I wanted to share with you!
