Keto-Friendly Bread Substitutes

For many people, the hardest part of going keto is giving up bread. I mean, I get it. Bread is comfort food. It’s been there for you since you were a toddler, fresh out of the toaster, covered with butter and jam. Yummy bread, your favorite lunch meat, and bright yellow mustard sustained you during your elementary school days, when the lunches served in the cafeteria were barely edible. That fresh loaf of bread was the first thing you reached for on the day after Thanksgiving. You had been thinking about that turkey sandwich for weeks, and it was finally time. Yeah. Bread is good.

But on the ketogenic diet, bread is a no-no.  One slice of whole wheat bread spikes your insulin higher than a Snickers bar… true story. Thankfully, we live in an era where food is experimented with and just about anyone can master the art of cooking. Because of that, we have access to some incredible recipes for keto-friendly bread substitutes!

Here are some of my favorites!

Quick Microwave Mug Bread

1 tbsp butter or MCT oil

1/3 c. blanched almond flour

1 egg, beaten

½ tsp baking powder

1 pinch salt

Place butter in a mug, then put in microwave for 10-15 seconds until butter is melted. Turn cup to coat sides with melted butter. Combine the rest of the ingredients in the mug, whisking until smooth. Cook in the microwave for 90 seconds.

 

Fat Head Pizza Dough

1 ½ c. shredded mozzarella cheese

¾ c. almond flour

2 tbsp cubed cream cheese

1 egg, beaten

1 tsp Italian seasoning

Combine the cream cheese and mozzarella. Heat in microwave, for 30 seconds at a time, stirring, until smooth. Let the mixture cool a bit, then stir in egg and almond flour. Turn dough out onto parchment paper and spread thin using wet hands. Using a fork, poke several holes in the dough to allow steam to vent. Bake at 425 for 8 minutes. Take out of the oven, cover with sauce and your favorite pizza toppings. Return to oven for 6-12 minutes, until cheese is golden and bubbling.

 

Keto Bagels

1 ½ c. shredded mozzarella cheese

1 oz. cream cheese

¾ cup almond flour

1 large egg, beaten

1 tsp baking powder

Coarse salt, or seasonings of your choice

Preheat oven to 400 degrees and line a baking sheet with parchment paper. Combine the cream cheese and mozzarella. Heat in microwave, for 30 seconds at a time, stirring, until smooth. Add the almond flour, egg, and baking powder; mix until well combined. Divide the dough equally into six pieces. Roll each piece into a six to eight-inch rope. Join the ends together to form a bagel shape. Brush water onto the top of each bagel, then top with your seasoning (I love ‘Everything’ seasoning). Bake at 400 degrees for 12-14 minutes.

These are my three favorite bread recipes. I always drink bone broth (the broth) or my Intentionally Bare Bone Broth Protein Powder to break a fast, but later I love to have a keto-friendly ‘bread’ as part of my dinner as it’s such a comfort. I can load them up with cream cheese or make a toasted cheese sandwich. They really feel like you’re indulging in something sinful, but as you can see, they are perfectly keto-friendly!
